Cal has over 10 years of experience in the beer industry. He was the Head Brewer at Cerveceria Transpeninsular in Ensenada, Baja California. At the 2017 Cerveza Mexico, he won a Gold for his Double IPA and Bronze for American Amber.

Marlon has over 25 years in the hospitality business across hotels, restaurants, bars, night clubs and golf course resorts. He loves using learnings from his experience to better manage operations, balance resources and bring innovative solutions to complex problems. He adds value by utilizing the full potential of people and capital - two of the most important factors that make up the core of this business.
Biker, musician, chef, artist and photographer, the multi-talented Neil Alexander also happens to be our Mixologist and Flavor Architect!
With over 18 years of experience in the hospitality industry, Neil began his career with the Jumeirah Group in Dubai before joining the bar team at the Buddha Bar. Neil has concocted a mind-boggling array of infusions and craft cocktails for Windmills - all mixed with care, passion, and attention - first in Windmills India, and now in the US.
Director of Culinary Operations
From Kolar to Mauritius to Bengaluru to the UK to Bengaluru - life, for our Director of Culinary Operations, has always been a highway! And now, the journey takes him onwards to Windmills, Grandscape, Texas.
From 2014-17, he undertook a 20,000 km fieldtrip around Karnataka to deep dive into regional cuisine. The results of that adventure are now showcased at our award-winning restaurant, Oota. Many of the popular dishes on the Windmills menu, from the Beef Picante to the Wild Mushroom Risotto, are also the result of Chef Suresh's excellent handiwork.

From buying a "Mr. Beer" home brewing kit at a 7-Eleven store in Dallas more than 15 years ago, to transitioning from a technology career to setting up Windmills in Bangalore, India and back again in Texas with Windmills at Grandscape, Ajay's career has been eventful to say the least. Managing brewpubs and restaurants across countries, Ajay tries to bring the best of both worlds by cross pollinating ideas and cultures.
Kamal Sagar and Shibanee Sagar, founded 'Total Environment' which changed the face of real estate development in Bangalore, through distinctive designs and nature-inspired constructions. Windmills was fuelled by their vision to build something unique, found a befitting partner in Ajay's (CEO) passion for brewing, something that broke the stereotype of pubs, something far more than a beer pub with a brewery.
